Lunch recipes Page 4

Lunch recipes built around salads, soups, wraps and cold sides you can make in 30 minutes or less. Many of them skip the oven. The salads range from watermelon mint and cucumber tomato to creamy pasta salad, elote pasta salad, tuna pasta salad and high-protein chicken salads that work for meal prep. On cooler days there are tomato basil, roasted tomato, lentil and potato soups.

For handheld options, try Vietnamese spring rolls and rice paper rolls with peanut sauce, or a turkey and cheese wrap packed for school. Dips and small bites such as hummus, mini quiches, caprese skewers and stuffed mini tomatoes suit potlucks and snack plates. Check the time in each title: several take 5 to 15 minutes, while soups and baked items need closer to 40.
