Ingredients:
- 1 sheet (17.3 oz / 490g) frozen puff pastry, thawed
- 1 tbsp (15ml) olive oil
- 4 oz (113g) goat cheese, softened
- 1 ½ cups (225g) cherry tomatoes, halved
- 1 tsp (2g) dried oregano
- ½ tsp (1g) flaky sea salt
- ¼ tsp (1g) cracked black pepper
- 2 tbsp (8g) fresh basil leaves, torn
- 1 tsp (5ml) balsamic glaze
Instructions:
- Preheat oven to 400°F (200°C) and line a large baking sheet with parchment paper.
- Unroll the puff pastry and lightly score a 1-inch border around the edge with a knife, being careful not to cut all the way through.
- Spread the softened goat cheese evenly inside the scored border using a small offset spatula or butter knife.
- Arrange the halved cherry tomatoes cut-side up across the goat cheese layer.
- Brush the exposed pastry edges with olive oil and sprinkle the dried oregano, salt, and black pepper over the entire tart.
- Bake on the center rack for 20–25 minutes until the pastry is mahogany-colored and puffed, and the tomatoes have slightly charred at the edges.
- Remove from the oven and let the tart rest for 5 minutes to allow the cheese to set.
- Top with fresh torn basil leaves and a drizzle of balsamic glaze before slicing.
