Ingredients:
- 1/2 cup (115g) unsalted butter, softened
- 1/2 cup (100g) packed light brown sugar
- 1 large egg, room temperature
- 1 tsp (5ml) pure vanilla extract
- 1 1/4 cups (150g) whole wheat pastry flour
- 1/2 tsp (3g) baking soda
- 1/4 tsp (1.5g) fine sea salt
- 2 cups (60g) cereal
- 1/4 cup (35g) dark chocolate chips
Instructions:
- Cream the softened butter and brown sugar using an electric mixer on medium-high for 3 minutes until the texture is pale and fluffy.
- Add the egg and vanilla extract to the butter mixture and beat on medium for 60 seconds until smooth and fully combined.
- Gradually stir in the flour, baking soda, and salt using a spatula, folding until just a few streaks of flour remain.
- Gently fold in the cereal and dark chocolate chips by hand to avoid crushing the cereal pieces.
- Scoop rounded tablespoons of dough onto a parchment-lined baking sheet, spacing them 2 inches apart.
- Bake in a preheated oven at 350°F (175°C) for 8–10 minutes, removing when edges are light mahogany-brown.
