Ingredients:

  • 1/2 cup (115g) unsalted butter, softened
  • 1/2 cup (100g) packed light brown sugar
  • 1 large egg, room temperature
  • 1 tsp (5ml) pure vanilla extract
  • 1 1/4 cups (150g) whole wheat pastry flour
  • 1/2 tsp (3g) baking soda
  • 1/4 tsp (1.5g) fine sea salt
  • 2 cups (60g) cereal
  • 1/4 cup (35g) dark chocolate chips

Instructions:

  1. Cream the softened butter and brown sugar using an electric mixer on medium-high for 3 minutes until the texture is pale and fluffy.
  2. Add the egg and vanilla extract to the butter mixture and beat on medium for 60 seconds until smooth and fully combined.
  3. Gradually stir in the flour, baking soda, and salt using a spatula, folding until just a few streaks of flour remain.
  4. Gently fold in the cereal and dark chocolate chips by hand to avoid crushing the cereal pieces.
  5. Scoop rounded tablespoons of dough onto a parchment-lined baking sheet, spacing them 2 inches apart.
  6. Bake in a preheated oven at 350°F (175°C) for 8–10 minutes, removing when edges are light mahogany-brown.
