Ingredients:
- 32 oz frozen tater tots
- 2 tbsp olive oil
- 8 oz sharp cheddar cheese, shredded
- 6 slices cooked bacon, crumbled
- 2 tbsp fresh chives, finely chopped
- 1/2 cup sour cream
- 1/4 cup ranch dressing
- 1 tsp lemon juice
Instructions:
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a bowl, lightly toss the frozen tater tots with olive oil to ensure an even, golden-brown finish.
- Thread 5-6 tater tots onto each soaked bamboo skewer, ensuring they are snug but not crushed.
- Place the skewers on the baking sheet, leaving one inch of space between them, and bake for 20-25 minutes until they turn a deep golden mahogany.
- Remove the tray from the oven and quickly sprinkle the shredded cheddar cheese and crumbled bacon over the hot tots.
- Return the tray to the oven for 3-5 minutes until the cheese is bubbling and velvety.
- Garnish with fresh chives and serve with a dip made by mixing sour cream, ranch dressing, and lemon juice.
