Ingredients:

  • 32 oz frozen tater tots
  • 2 tbsp olive oil
  • 8 oz sharp cheddar cheese, shredded
  • 6 slices cooked bacon, crumbled
  • 2 tbsp fresh chives, finely chopped
  • 1/2 cup sour cream
  • 1/4 cup ranch dressing
  • 1 tsp lemon juice

Instructions:

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a bowl, lightly toss the frozen tater tots with olive oil to ensure an even, golden-brown finish.
  3. Thread 5-6 tater tots onto each soaked bamboo skewer, ensuring they are snug but not crushed.
  4. Place the skewers on the baking sheet, leaving one inch of space between them, and bake for 20-25 minutes until they turn a deep golden mahogany.
  5. Remove the tray from the oven and quickly sprinkle the shredded cheddar cheese and crumbled bacon over the hot tots.
  6. Return the tray to the oven for 3-5 minutes until the cheese is bubbling and velvety.
  7. Garnish with fresh chives and serve with a dip made by mixing sour cream, ranch dressing, and lemon juice.
