Ingredients:

  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup granulated sugar
  • 1 tablespoon pure vanilla extract
  • 1/4 teaspoon fine sea salt

Instructions:

  1. In a medium saucepan, stir together the whole milk, sugar, and salt.
  2. Place over medium-low heat and stir constantly until the sugar has completely dissolved and the mixture is steaming, but not boiling.
  3. Remove from heat and stir in the vanilla extract. Let the mixture sit for 10 minutes to infuse.
  4. Strain the mixture through a fine-mesh strainer into a bowl and stir in the chilled heavy cream until smooth.
  5. Cover the bowl with plastic wrap, pressing it directly onto the surface of the liquid to prevent a skin from forming.
  6. Refrigerate the base for at least 8 hours, ideally overnight, to ensure a small ice crystal size and luxury texture.
