Ingredients:
- 2 cups heavy cream
- 1 cup whole milk
- 3/4 cup granulated sugar
- 1 tablespoon pure vanilla extract
- 1/4 teaspoon fine sea salt
Instructions:
- In a medium saucepan, stir together the whole milk, sugar, and salt.
- Place over medium-low heat and stir constantly until the sugar has completely dissolved and the mixture is steaming, but not boiling.
- Remove from heat and stir in the vanilla extract. Let the mixture sit for 10 minutes to infuse.
- Strain the mixture through a fine-mesh strainer into a bowl and stir in the chilled heavy cream until smooth.
- Cover the bowl with plastic wrap, pressing it directly onto the surface of the liquid to prevent a skin from forming.
- Refrigerate the base for at least 8 hours, ideally overnight, to ensure a small ice crystal size and luxury texture.
