Ingredients:
- 2 cups (180g) Old-fashioned rolled oats
- ½ cup (125g) Natural creamy peanut butter
- ⅓ cup (80ml) Pure maple syrup
- 1 tsp (5ml) Vanilla extract
- ¼ tsp (1.5g) Fine sea salt
- 1 cup (170g) Dark chocolate chips
- 2 tbsp (30ml) Coconut oil, melted
Instructions:
- Combine the oats, peanut butter, maple syrup, vanilla, and salt in a large bowl.
- Stir until the oats are fully coated and the mixture feels heavy and cohesive.
- Transfer the mixture to a parchment-lined 8x8 inch square baking pan and press firmly into the corners using a spatula until a dense, level layer is formed.
- Combine chocolate chips and coconut oil in a microwave-safe bowl. Heat in 30-second intervals, stirring between each, until the mixture is glossy and smooth.
- Pour the melted chocolate over the oat base, spreading it evenly to the edges.
