Ingredients:

  • 2 cups (180g) Old-fashioned rolled oats
  • ½ cup (125g) Natural creamy peanut butter
  • ⅓ cup (80ml) Pure maple syrup
  • 1 tsp (5ml) Vanilla extract
  • ¼ tsp (1.5g) Fine sea salt
  • 1 cup (170g) Dark chocolate chips
  • 2 tbsp (30ml) Coconut oil, melted

Instructions:

  1. Combine the oats, peanut butter, maple syrup, vanilla, and salt in a large bowl.
  2. Stir until the oats are fully coated and the mixture feels heavy and cohesive.
  3. Transfer the mixture to a parchment-lined 8x8 inch square baking pan and press firmly into the corners using a spatula until a dense, level layer is formed.
  4. Combine chocolate chips and coconut oil in a microwave-safe bowl. Heat in 30-second intervals, stirring between each, until the mixture is glossy and smooth.
  5. Pour the melted chocolate over the oat base, spreading it evenly to the edges.
