Ingredients:

  • 1.5 cups (180g) graham cracker crumbs
  • 4 tbsp (57g) unsalted butter, melted
  • 1 tbsp (21g) honey
  • 1/4 tsp (1.5g) sea salt
  • 1 cup (170g) dark chocolate chips
  • 1/2 cup (85g) mini marshmallows
  • 1.5 cups (120g) mini marshmallows

Instructions:

  1. Combine graham cracker crumbs, melted butter, honey, and salt in a bowl. Stir until the mixture resembles wet sand.
  2. Press the mixture firmly into the bottom of a parchment-lined 8x8 inch baking pan using a flat-bottomed cup to ensure a dense crust.
  3. Scatter the dark chocolate chips evenly over the crust.
  4. Scatter the 1/2 cup of mini marshmallows over the chocolate.
  5. Top the chocolate with a single, tight layer of 1.5 cups mini marshmallows, ensuring no large gaps remain.
  6. Bake at 350°F (175°C) for 15–20 minutes until the marshmallows have puffed up and look soft.
  7. Turn on the broiler for the final 60–90 seconds until the marshmallows are toasted mahogany brown.
  8. Allow the bars to cool completely for 30 minutes before slicing with a sharp knife.
