Ingredients:
- 2 cups (250g) all-purpose flour
- 3/4 cup (150g) granulated sugar
- 1 tbsp (8g) baking powder
- 1 tsp (2g) ground cinnamon
- 1/2 tsp (3g) salt
- 2 large eggs
- 1/2 cup (120ml) vegetable oil
- 1/2 cup (120ml) Greek yogurt
- 1 tsp (5ml) vanilla extract
- 2 cups (300g) peeled and diced Granny Smith apples
- 1 cup (120g) powdered sugar
- 2 tbsp (30ml) heavy cream
- 1 tsp (5ml) vanilla extract
- 1 pinch salt
Instructions:
- Preheat your oven to 400°F (200°C) and line a 12-cup standard muffin tin with paper liners.
- In a medium bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt until no clumps remain.
- In a large bowl, beat the eggs, oil, Greek yogurt, and vanilla extract until the mixture is smooth and emulsified.
- Pour the dry ingredients into the wet ingredients and fold gently with a silicone spatula until just combined, leaving a few streaks of flour.
- Gently fold in the diced apples.
- Divide the batter evenly between the 12 liners, filling them nearly to the top.
- Bake for 18-22 minutes until a toothpick inserted into the center comes out clean. Cool in the pan for 5 minutes before transferring to a wire rack.
- Whisk together the powdered sugar, heavy cream, vanilla extract, and a pinch of salt. Apply the glaze to the muffins once they are warm but not hot.
