Ingredients:

  • 2 cups (250g) all-purpose flour
  • ¾ cup (150g) granulated sugar
  • 2 tsp (10g) baking powder
  • ½ tsp (3g) salt
  • ½ cup (120ml) neutral vegetable oil
  • 1 large egg (50g)
  • ½ cup (120ml) whole milk
  • 2 tsp (10ml) pure vanilla extract
  • 2 cups (300g) peeled and finely diced apples
  • 1 tsp (5g) ground cinnamon

Instructions:

  1. Preheat the oven to 425°F (218°C) and line a 12-cup standard muffin tin with paper liners or grease with cooking spray.
  2. In a medium bowl, whisk together the flour, sugar, baking powder, and salt until no lumps remain.
  3. In a large bowl, whisk together the vegetable oil, egg, milk, and vanilla extract until the mixture is smooth.
  4. Pour the dry ingredients into the wet mixture and use a spatula to fold together until just combined; do not over-mix.
  5. Gently fold in the diced apples and ground cinnamon until evenly distributed.
  6. Divide the batter evenly among the 12 muffin wells, filling them nearly to the top.
  7. Bake at 425°F (218°C) for 5 minutes, then reduce the oven temperature to 350°F (175°C) and bake for an additional 13–15 minutes without opening the oven door.
