Ingredients:

  • 1 lb fresh strawberries
  • 8 oz high-quality dark chocolate (60% cacao)
  • 1 tsp refined coconut oil
  • 2 oz white chocolate
  • 1 pinch flaked sea salt

Instructions:

  1. Wash and dry the 1 lb fresh strawberries thoroughly. Note: This prevents the chocolate from sliding off.
  2. Chop the 8 oz dark chocolate into uniform, small shards. Note: Smaller pieces melt evenly and faster, preventing hot spots.
  3. Melt the dark chocolate with 1 tsp refined coconut oil using a double boiler. Note: Steam should never touch the chocolate.
  4. Stir the mixture until it is completely velvety and fluid.
  5. Hold a strawberry by the green stem and submerge it into the dark chocolate. Note: Leave a small sliver of red showing at the top for contrast.
  6. Lift and swirl the berry, allowing the excess chocolate to drip back into the bowl. Note: This prevents the chocolate foot from forming.
  7. Place the berry on a parchment lined tray until the surface begins to lose its wet look.
  8. Melt the 2 oz white chocolate in a separate small bowl.
  9. Drizzle the white chocolate in thin, sweeping motions across the berries.
  10. Sprinkle a tiny pinch of flaked sea salt until the chocolate is fully set and firm.
