Ingredients:

  • 1 lb fresh strawberries, firm with hulls intact
  • 10 oz dark chocolate, finely chopped
  • 2 tsp coconut oil
  • 2 oz white chocolate for drizzling
  • 1 tsp crushed freeze-dried raspberries
  • 1 tsp toasted pistachios
  • 0.25 tsp flaky sea salt

Instructions:

  1. Wash strawberries in cold water. Gently pat dry with paper towels. Lay them on a clean towel for at least 30 minutes until bone-dry and at room temperature.
  2. Set up a double boiler with simmering water. Melt the dark chocolate and coconut oil, stirring constantly until smooth.
  3. Holding a strawberry by the green hull, submerge into the chocolate. Lift and shake gently to remove excess. Place on a parchment-lined baking sheet.
  4. Melt white chocolate in a small microwave-safe bowl in 15-second intervals. Drizzle over the dark chocolate coating.
  5. Immediately sprinkle with optional toppings like pistachios, freeze-dried raspberries, or sea salt. Let set at room temperature for 30 minutes until the shell is firm.
