Ingredients:
- 1 lb fresh strawberries, firm with hulls intact
- 10 oz dark chocolate, finely chopped
- 2 tsp coconut oil
- 2 oz white chocolate for drizzling
- 1 tsp crushed freeze-dried raspberries
- 1 tsp toasted pistachios
- 0.25 tsp flaky sea salt
Instructions:
- Wash strawberries in cold water. Gently pat dry with paper towels. Lay them on a clean towel for at least 30 minutes until bone-dry and at room temperature.
- Set up a double boiler with simmering water. Melt the dark chocolate and coconut oil, stirring constantly until smooth.
- Holding a strawberry by the green hull, submerge into the chocolate. Lift and shake gently to remove excess. Place on a parchment-lined baking sheet.
- Melt white chocolate in a small microwave-safe bowl in 15-second intervals. Drizzle over the dark chocolate coating.
- Immediately sprinkle with optional toppings like pistachios, freeze-dried raspberries, or sea salt. Let set at room temperature for 30 minutes until the shell is firm.
