Ingredients:

  • 1/2 cup (115g) unsalted butter, softened
  • 3/4 cup (150g) brown sugar, packed
  • 1/4 cup (50g) granulated sugar
  • 1 large egg
  • 1 tsp (5ml) vanilla extract
  • 1 1/2 cups (190g) all-purpose flour
  • 1/2 tsp (3g) baking soda
  • 1/4 tsp (1.5g) salt
  • 1/2 cup (45g) rolled oats
  • 1 1/2 cups (200g) trail mix
  • 1/4 cup (30g) chocolate chunks

Instructions:

  1. Beat the softened butter, brown sugar, and granulated sugar in a large bowl until pale and fluffy (about 2-3 minutes).
  2. Add the egg and vanilla extract, beating on medium speed until fully combined and smooth.
  3. Sift in the flour, baking soda, and salt. Stir in the rolled oats on low speed just until no streaks of flour remain.
  4. Gently fold in the trail mix and optional chocolate chunks using a spatula until evenly distributed.
  5. Portion the dough into 1 1/2 tablespoon balls using a cookie scoop.
  6. Place the dough balls on a parchment-lined baking sheet and freeze for 2 hours or until rock solid.
  7. Transfer the frozen balls into a freezer-safe bag, separating layers with parchment paper.
  8. Preheat the oven to 350°F (175°C) and bake the frozen dough balls for 9 minutes.
