Ingredients:
- 1/2 cup (115g) unsalted butter, softened
- 3/4 cup (150g) brown sugar, packed
- 1/4 cup (50g) granulated sugar
- 1 large egg
- 1 tsp (5ml) vanilla extract
- 1 1/2 cups (190g) all-purpose flour
- 1/2 tsp (3g) baking soda
- 1/4 tsp (1.5g) salt
- 1/2 cup (45g) rolled oats
- 1 1/2 cups (200g) trail mix
- 1/4 cup (30g) chocolate chunks
Instructions:
- Beat the softened butter, brown sugar, and granulated sugar in a large bowl until pale and fluffy (about 2-3 minutes).
- Add the egg and vanilla extract, beating on medium speed until fully combined and smooth.
- Sift in the flour, baking soda, and salt. Stir in the rolled oats on low speed just until no streaks of flour remain.
- Gently fold in the trail mix and optional chocolate chunks using a spatula until evenly distributed.
- Portion the dough into 1 1/2 tablespoon balls using a cookie scoop.
- Place the dough balls on a parchment-lined baking sheet and freeze for 2 hours or until rock solid.
- Transfer the frozen balls into a freezer-safe bag, separating layers with parchment paper.
- Preheat the oven to 350°F (175°C) and bake the frozen dough balls for 9 minutes.
