- 2 tbsp (30ml) Extra Virgin Olive Oil
- 3 tbsp (12g) Fresh Sage, finely minced
- 2 tbsp (8g) Fresh Rosemary, finely minced
- 2 tbsp (8g) Fresh Thyme leaves
- 6 cloves (30g) Garlic, grated into a paste
- 1 tbsp Lemon zest
- 1.5 tbsp (18g) Kosher Salt
- 1 tsp (2g) Coarsely ground Black Pepper
- 1 tsp (2g) Smoked Paprika
Instructions:
- Place the softened butter in a mixing bowl. Use a spatula to cream it until it reaches a smooth, frosting-like consistency without melting it.
- Finely mince the sage, rosemary, and thyme to release volatile oils. Grate the garlic cloves directly into the bowl to capture all juices.
- Add the minced herbs, garlic paste, lemon zest, and olive oil to the creamed butter. Fold together until the aromatics are evenly distributed.
- Incorporate the kosher salt, black pepper, and smoked paprika. Mix thoroughly until the butter is highly fragrant.
- Apply immediately under the turkey skin and over the exterior, or roll in parchment paper into a log and chill until firm for make-ahead preparation.
