Ingredients:

  • 8 sheets rice paper (approx. 22 cm)
  • 2 cups warm water
  • 2 tbsp neutral oil spray
  • 4 oz cream cheese, softened
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1 medium banana, thinly sliced
  • 1/4 cup finely chopped strawberries
  • 2 tbsp granulated sugar
  • 1 tsp ground cinnamon

Instructions:

  1. In a small bowl, whip together the softened cream cheese, maple syrup, and vanilla extract until the mixture is velvety and smooth. Gently fold in the sliced banana and chopped fruit.
  2. Fill a shallow bowl with warm water. Dip one sheet of rice paper for 3-5 seconds until pliable but still slightly firm. Lay it flat on a clean surface.
  3. Place 1 generous tablespoon of filling in the center of the rice paper. Fold the sides inward and roll tightly like a small burrito.
  4. Line the air fryer basket with parchment paper. Arrange the rolls in a single layer, ensuring they are not touching. Lightly spray the tops with neutral oil.
  5. Cook at 390°F (200°C) for 8–10 minutes until the rolls reach a mahogany-colored hue and an audible sizzle.
  6. Immediately upon removing from the air fryer, toss the rolls in a mixture of cinnamon and sugar.
