Ingredients:
- 8 sheets rice paper (approx. 22 cm)
- 2 cups warm water
- 2 tbsp neutral oil spray
- 4 oz cream cheese, softened
- 2 tbsp maple syrup
- 1 tsp vanilla extract
- 1 medium banana, thinly sliced
- 1/4 cup finely chopped strawberries
- 2 tbsp granulated sugar
- 1 tsp ground cinnamon
Instructions:
- In a small bowl, whip together the softened cream cheese, maple syrup, and vanilla extract until the mixture is velvety and smooth. Gently fold in the sliced banana and chopped fruit.
- Fill a shallow bowl with warm water. Dip one sheet of rice paper for 3-5 seconds until pliable but still slightly firm. Lay it flat on a clean surface.
- Place 1 generous tablespoon of filling in the center of the rice paper. Fold the sides inward and roll tightly like a small burrito.
- Line the air fryer basket with parchment paper. Arrange the rolls in a single layer, ensuring they are not touching. Lightly spray the tops with neutral oil.
- Cook at 390°F (200°C) for 8–10 minutes until the rolls reach a mahogany-colored hue and an audible sizzle.
- Immediately upon removing from the air fryer, toss the rolls in a mixture of cinnamon and sugar.
