Ingredients:

  • 2 oz Triple-Distilled Irish Whiskey
  • 0.5 oz St-Germain Elderflower Liqueur
  • 0.75 oz freshly squeezed lemon juice
  • 0.5 oz simple syrup (1:1 ratio)
  • 3 thick slices English cucumber
  • 6 large fresh mint leaves
  • 1 large egg white
  • 3 drops Angostura Bitters
  • 1 sprig fresh mint

Instructions:

  1. Place the 3 cucumber slices and 6 mint leaves in your shaker. Muddle until the cucumber is crushed and fragrant.
  2. Add the 2 oz Irish whiskey, 0.5 oz elderflower liqueur, 0.75 oz lemon juice, and 0.5 oz simple syrup.
  3. Incorporate the texture. Crack the egg white into the shaker. Check for any stray bits of shell.
  4. Secure the lid and shake vigorously for 15 seconds without ice. Wait until you feel the pressure build in the jar.
  5. Add a large handful of ice cubes. Shake until the outside of the container is painfully cold.
  6. Double strain. Pour through a fine mesh strainer into your chilled glass. Watch for a thick, meringue like layer to form on top.
  7. Carefully place 3 drops of Angostura Bitters on the foam.
  8. Garnish and serve. Slap the mint sprig against your wrist and tuck it into the foam. The scent should hit you immediately.
