Ingredients:
- 2 cups (250g) All-purpose flour
- 3/4 cup (150g) Brown sugar, packed
- 1 tbsp (8g) Ground cinnamon
- 1/2 tsp (1g) Ground nutmeg
- 1/2 tsp (1g) Ground cloves
- 1 tbsp (12g) Baking powder
- 1/2 tsp (3g) Baking soda
- 1/2 tsp (3g) Salt
- 1/2 cup (115g) Unsalted butter, melted
- 2 Large eggs
- 1/2 cup (120ml) Sour cream
- 1 tsp (5ml) Vanilla extract
- 2 cups (300g) Firm baking apples, peeled and finely diced
- 1 tbsp (15ml) Lemon juice
Instructions:
- Peel and dice the apples into small, uniform 1/4-inch cubes. Toss them gently with lemon juice to prevent browning.
- Spread the diced apples on a paper towel and pat the tops firmly to remove excess surface moisture.
- In a large bowl, whisk together the flour, brown sugar, cinnamon, nutmeg, cloves, baking powder, baking soda, and salt until no brown sugar clumps remain.
- In a medium bowl, whisk the melted butter, eggs, sour cream, and vanilla until the mixture is smooth.
- Pour the wet ingredients into the dry ingredients and fold together with a spatula only until barely incorporated.
- Gently fold in the patted-dry apple pieces.
- Divide the batter evenly among 12 lined muffin cups and bake for 25 minutes or until a toothpick comes out clean.
