Ingredients:

  • 2 cups (250g) All-purpose flour
  • 3/4 cup (150g) Brown sugar, packed
  • 1 tbsp (8g) Ground cinnamon
  • 1/2 tsp (1g) Ground nutmeg
  • 1/2 tsp (1g) Ground cloves
  • 1 tbsp (12g) Baking powder
  • 1/2 tsp (3g) Baking soda
  • 1/2 tsp (3g) Salt
  • 1/2 cup (115g) Unsalted butter, melted
  • 2 Large eggs
  • 1/2 cup (120ml) Sour cream
  • 1 tsp (5ml) Vanilla extract
  • 2 cups (300g) Firm baking apples, peeled and finely diced
  • 1 tbsp (15ml) Lemon juice

Instructions:

  1. Peel and dice the apples into small, uniform 1/4-inch cubes. Toss them gently with lemon juice to prevent browning.
  2. Spread the diced apples on a paper towel and pat the tops firmly to remove excess surface moisture.
  3. In a large bowl, whisk together the flour, brown sugar, cinnamon, nutmeg, cloves, baking powder, baking soda, and salt until no brown sugar clumps remain.
  4. In a medium bowl, whisk the melted butter, eggs, sour cream, and vanilla until the mixture is smooth.
  5. Pour the wet ingredients into the dry ingredients and fold together with a spatula only until barely incorporated.
  6. Gently fold in the patted-dry apple pieces.
  7. Divide the batter evenly among 12 lined muffin cups and bake for 25 minutes or until a toothpick comes out clean.
