Ingredients:
- 1 cup (227g) unsalted butter, softened
- 1 cup (200g) granulated white sugar
- 1 large egg, room temperature
- 2 tsp (10ml) pure vanilla extract
- 1/2 tsp (2.5ml) almond extract
- 2 1/2 cups (312g) all-purpose flour
- 2 tbsp (16g) cornstarch
- 1 tsp (5g) baking powder
- 1/2 tsp (3g) fine sea salt
- 1/4 cup (50g) gold sparkling sugar
- 1/4 cup (50g) silver sparkling sugar
- 2 tbsp (25g) white pearl sprinkles
Instructions:
- Preheat oven to 350°F (175°C). Cream softened butter and granulated sugar for 3-4 minutes until pale and fluffy. Add egg, vanilla, and almond extract, beating for another minute until smooth.
- In a separate bowl, whisk together all-purpose flour, cornstarch, baking powder, and salt. Gradually add dry ingredients to the wet mixture on low speed until no streaks of flour remain.
- Scoop 1.5-tablespoon portions of dough and roll into smooth balls. Roll each ball in the gold and silver sparkling sugars until completely coated.
- Place dough balls on prepared baking sheets spaced 2 inches apart. Bake for 9-11 minutes until edges are set but not browned. Cool on the pan for 5 minutes before moving to a wire rack.
