Ingredients:

  • 1 cup (227g) unsalted butter, softened
  • 1 cup (200g) granulated white sugar
  • 1 large egg, room temperature
  • 2 tsp (10ml) pure vanilla extract
  • 1/2 tsp (2.5ml) almond extract
  • 2 1/2 cups (312g) all-purpose flour
  • 2 tbsp (16g) cornstarch
  • 1 tsp (5g) baking powder
  • 1/2 tsp (3g) fine sea salt
  • 1/4 cup (50g) gold sparkling sugar
  • 1/4 cup (50g) silver sparkling sugar
  • 2 tbsp (25g) white pearl sprinkles

Instructions:

  1. Preheat oven to 350°F (175°C). Cream softened butter and granulated sugar for 3-4 minutes until pale and fluffy. Add egg, vanilla, and almond extract, beating for another minute until smooth.
  2. In a separate bowl, whisk together all-purpose flour, cornstarch, baking powder, and salt. Gradually add dry ingredients to the wet mixture on low speed until no streaks of flour remain.
  3. Scoop 1.5-tablespoon portions of dough and roll into smooth balls. Roll each ball in the gold and silver sparkling sugars until completely coated.
  4. Place dough balls on prepared baking sheets spaced 2 inches apart. Bake for 9-11 minutes until edges are set but not browned. Cool on the pan for 5 minutes before moving to a wire rack.
