Ingredients:

  • 1 cup (225g) unsalted butter, softened
  • 1/2 cup (100g) granulated sugar
  • 1/4 cup (60ml) honey or maple syrup
  • 1 large egg, room temperature
  • 2 tsp (10ml) vanilla extract
  • 2 1/2 cups (310g) all-purpose flour
  • 2 tbsp (16g) cornstarch
  • 1/2 tsp (3g) baking powder
  • 1/4 tsp (1.5g) salt
  • 2 cups (240g) powdered sugar
  • 2 tbsp (30ml) milk
  • 1 tsp (5ml) vanilla extract
  • Gel food coloring

Instructions:

  1. Beat the softened butter, sugar, and honey on medium speed until the mixture looks pale and fluffy. Add the egg and vanilla, beating until the batter is smooth and fully emulsified.
  2. Gradually mix in the flour, cornstarch, baking powder, and salt. Once a soft dough forms, wrap it tightly in plastic wrap and refrigerate for at least 60 minutes until firm.
  3. Preheat oven to 350°F (175°C). Roll dough on a lightly floured surface to 1/4-inch thickness. Cut into graduation shapes and bake for 8–10 minutes; remove when edges are barely set.
  4. Whisk powdered sugar, milk, and vanilla extract until smooth. Divide icing into bowls and stir in gel colors. Pipe a base layer on cooled cookies, then add fine details.
