Ingredients:

  • 1.5 lbs (680g) boneless skinless chicken breasts, cut into 1-inch cubes
  • 2 cups (150g) broccoli florets
  • 1 cup (130g) carrots, sliced into thin rounds
  • 1 red bell pepper, chopped into 1-inch pieces
  • ½ red onion, cut into wedges
  • 2 tbsp (30ml) extra virgin olive oil
  • 1 tbsp (15ml) fresh lemon juice
  • 3 cloves garlic, minced
  • 1 tsp (5g) dried Italian seasoning
  • ½ tsp (3g) garlic powder
  • ½ tsp (3g) sea salt
  • ¼ tsp (1g) cracked black pepper
  • ⅓ cup (30g) grated Parmesan cheese
  • 1 lemon, cut into wedges

Instructions:

  1. Preheat your oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper.
  2. In a large mixing bowl, combine the cubed chicken, broccoli, carrots, red bell pepper, and red onion.
  3. Drizzle with olive oil and lemon juice, then add minced garlic, Italian seasoning, garlic powder, salt, and black pepper. Toss thoroughly until all ingredients are evenly coated.
  4. Spread the mixture in a single layer on the prepared baking sheet, ensuring ingredients are not crowded to allow for roasting rather than steaming.
  5. Roast for 15-18 minutes, until the chicken is opaque and the broccoli edges are slightly charred.
  6. Remove from the oven, sprinkle the grated parmesan evenly over the top, and return to the oven for an additional 2-3 minutes until the cheese is melted and golden.
  7. Serve immediately with lemon wedges.
