Ingredients:
- 1.5 lbs (680g) boneless skinless chicken breasts, cut into 1-inch cubes
- 2 cups (150g) broccoli florets
- 1 cup (130g) carrots, sliced into thin rounds
- 1 red bell pepper, chopped into 1-inch pieces
- ½ red onion, cut into wedges
- 2 tbsp (30ml) extra virgin olive oil
- 1 tbsp (15ml) fresh lemon juice
- 3 cloves garlic, minced
- 1 tsp (5g) dried Italian seasoning
- ½ tsp (3g) garlic powder
- ½ tsp (3g) sea salt
- ¼ tsp (1g) cracked black pepper
- ⅓ cup (30g) grated Parmesan cheese
- 1 lemon, cut into wedges
Instructions:
- Preheat your oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper.
- In a large mixing bowl, combine the cubed chicken, broccoli, carrots, red bell pepper, and red onion.
- Drizzle with olive oil and lemon juice, then add minced garlic, Italian seasoning, garlic powder, salt, and black pepper. Toss thoroughly until all ingredients are evenly coated.
- Spread the mixture in a single layer on the prepared baking sheet, ensuring ingredients are not crowded to allow for roasting rather than steaming.
- Roast for 15-18 minutes, until the chicken is opaque and the broccoli edges are slightly charred.
- Remove from the oven, sprinkle the grated parmesan evenly over the top, and return to the oven for an additional 2-3 minutes until the cheese is melted and golden.
- Serve immediately with lemon wedges.
