Ingredients:
- 4 large eggs
- 2 tbsp whole milk
- 1/2 tsp kosher salt
- 1/4 tsp freshly cracked black pepper
- 1/4 cup diced red bell pepper
- 2 green onions, thinly sliced
- 2 large 10-inch flour tortillas
- 1 cup shredded sharp cheddar cheese
- 1.5 tbsp salted butter
Instructions:
- Whisk eggs, milk, salt, and pepper until combined. Melt 1/2 tablespoon of butter in a non-stick skillet over medium-low heat. Sauté bell peppers and onions for 2 minutes.
- Pour in the egg mixture, pushing curds toward the center with a spatula. Remove from heat while eggs are still slightly wet and glossy; transfer to a bowl.
- Wipe the skillet clean. Lay one tortilla flat and sprinkle 1/4 cup of cheese over one half. Spread half the egg mixture over the cheese, then top with another 1/4 cup of cheese. Fold the tortilla in half.
- Melt the remaining butter in the skillet over medium heat. Sear the folded quesadillas for 2-3 minutes per side until the exterior is deep golden-brown and rigid.
