Ingredients:

  • 4 large eggs
  • 2 tbsp whole milk
  • 1/2 tsp kosher salt
  • 1/4 tsp freshly cracked black pepper
  • 1/4 cup diced red bell pepper
  • 2 green onions, thinly sliced
  • 2 large 10-inch flour tortillas
  • 1 cup shredded sharp cheddar cheese
  • 1.5 tbsp salted butter

Instructions:

  1. Whisk eggs, milk, salt, and pepper until combined. Melt 1/2 tablespoon of butter in a non-stick skillet over medium-low heat. Sauté bell peppers and onions for 2 minutes.
  2. Pour in the egg mixture, pushing curds toward the center with a spatula. Remove from heat while eggs are still slightly wet and glossy; transfer to a bowl.
  3. Wipe the skillet clean. Lay one tortilla flat and sprinkle 1/4 cup of cheese over one half. Spread half the egg mixture over the cheese, then top with another 1/4 cup of cheese. Fold the tortilla in half.
  4. Melt the remaining butter in the skillet over medium heat. Sear the folded quesadillas for 2-3 minutes per side until the exterior is deep golden-brown and rigid.
