Ingredients:

  • 2 ¼ cups (280g) all-purpose flour
  • ½ tsp (3g) baking soda
  • ¼ tsp (1.5g) salt
  • ½ cup (115g) unsalted butter, softened
  • ⅓ cup (65g) maple syrup
  • 1 large (50g) egg, room temperature
  • 1 tsp (5ml) pure vanilla extract
  • ½ tsp (2g) ground turmeric
  • 1 cup (120g) powdered sugar
  • 2 tbsp (30ml) milk
  • ½ tsp (2.5ml) vanilla extract
  • 1 tbsp (15g) dark chocolate

Instructions:

  1. Whisk together the flour, baking soda, salt, and turmeric in a medium bowl until the color is uniform.
  2. In a larger bowl, cream the softened butter and maple syrup until the mixture is velvety and pale.
  3. Beat in the egg and vanilla extract until fully incorporated and smooth.
  4. Gradually stir in the dry ingredients on low speed, mixing just until the flour disappears to avoid a tough texture.
  5. Preheat your oven to 350°F (175°C) and line your sheets with parchment paper.
  6. Roll the dough into small rectangles (roughly 2x3 inches) or roll the dough out to ½ inch thickness and cut into rectangles.
  7. Arrange cookies on the sheet, leaving 2 inches of space between them to prevent merging.
  8. Bake for 10–12 minutes. Remove when the edges are set but the centers still look slightly soft. Let them cool completely on the pan.
  9. Whisk the powdered sugar, milk, and vanilla until the glaze is thick but pourable.
  10. Pipe a thin rectangle of glaze on the top half of the cookie to create the window section.
  11. Add small dots of melted dark chocolate at the bottom corners for wheels and a small strip at the front for the bumper.
