- 1/3 cup (65g) brown sugar, packed
- 1 tsp (2g) ground cinnamon
- 4 tbsp (55g) cold unsalted butter, cubed
- 1 3/4 cups (210g) all-purpose flour
- 1 tsp (5g) baking soda
- 1/2 tsp (3g) salt
- 1 tbsp (6g) pumpkin pie spice
- 1 cup (245g) pumpkin purée
- 1/2 cup (120ml) vegetable oil
- 3/4 cup (150g) granulated sugar
- 2 large eggs
- 1 tsp (5ml) vanilla extract
- 1 cup (140g) Granny Smith apple, finely diced
Instructions:
- In a medium bowl, whisk together the flour, brown sugar, and cinnamon for the streusel.
- Add the cold, cubed butter to the streusel mix. Use a pastry cutter or forks to work the butter into the dry ingredients until the mixture resembles coarse, pea-sized crumbs. Set aside in the fridge.
- In a large bowl, whisk together the flour, baking soda, salt, and pumpkin pie spice.
- In a separate bowl, beat the pumpkin purée, oil, and sugar until smooth. Whisk in the eggs and vanilla extract until the mixture is velvety.
- Pour the wet ingredients into the dry ingredients. Using a spatula, fold gently until just moistened; stop immediately when no streaks of flour remain.
- Toss the diced apples in a tiny bit of flour to prevent them from sinking in the batter.
- Gently fold the floured apples into the batter, ensuring they are evenly distributed.
- Preheat your oven to 425°F (218°C).
- Divide the batter evenly among 12 lined muffin cups, filling them about 3/4 full.
- Generously heap the chilled streusel topping over each muffin and bake for 25 minutes.
