Ingredients:
- 1 cup (100g) Panko breadcrumbs
- 1/2 cup (50g) Grated Parmesan cheese
- 2 tbsp (30g) Unsalted butter, melted
- 1 tsp (2g) Garlic powder
- 1/2 tsp (3g) Dried oregano
- 1/2 tsp (3g) Salt
- 1/4 tsp (1g) Black pepper
- 1.5 lb (680g) Boneless skinless chicken thighs
- 1 lb (450g) Broccoli florets
- 1 lb (450g) Baby potatoes, halved
- 3 tbsp (42g) Olive oil
- 1 tsp (2g) Paprika
- 1 tbsp (15ml) Lemon juice
- 2 tbsp (8g) Fresh parsley, chopped
Instructions:
- Preheat your oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper.
- In a large bowl, toss the halved baby potatoes and broccoli florets with 2 tbsp of olive oil, paprika, salt, and pepper. Spread them across the edges of the baking sheet, leaving the center open for the chicken.
- In a medium bowl, combine the Panko breadcrumbs, grated Parmesan cheese, garlic powder, oregano, salt, and pepper.
- Stir the melted butter into the breadcrumb mixture until evenly coated.
- Pat the chicken thighs dry with paper towels, then press each piece firmly into the Parmesan mixture to ensure a thick, even coating on all sides.
- Place the crusted chicken in the center of the pan and drizzle the remaining 1 tbsp of olive oil over the surrounding vegetables.
- Bake for 25–30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the crust is golden brown.
- Remove from the oven and immediately drizzle with fresh lemon juice and a sprinkle of chopped parsley.
