Ingredients:

  • 1 package (3 oz) Raspberry Flavor Jell-O
  • 1 cup boiling water
  • 1/2 cup ice-cold water
  • 1.5 cups heavy whipping cream, chilled
  • 2 tbsp powdered sugar
  • 1 cup fresh raspberries
  • 6 fresh mint sprigs
  • 2 oz white chocolate, shaved

Instructions:

  1. Dissolve the Raspberry Jell-O powder in 1 cup of boiling water, stirring for at least 2 minutes until fully dissolved.
  2. Stir in the 1/2 cup of ice-cold water. Refrigerate the mixture for 15–20 minutes until it reaches a syrupy consistency.
  3. In a separate chilled bowl, beat the heavy whipping cream and powdered sugar until stiff peaks form.
  4. Using a rubber spatula, gently fold the whipped cream into the thickened Jell-O syrup until the color is uniform.
  5. Spoon the mousse into 6 individual dessert glasses and refrigerate for at least 4 hours to set.
  6. Before serving, garnish each cup with fresh raspberries, a mint sprig, and white chocolate shavings.
