Ingredients:
- 1 package (3 oz) Raspberry Flavor Jell-O
- 1 cup boiling water
- 1/2 cup ice-cold water
- 1.5 cups heavy whipping cream, chilled
- 2 tbsp powdered sugar
- 1 cup fresh raspberries
- 6 fresh mint sprigs
- 2 oz white chocolate, shaved
Instructions:
- Dissolve the Raspberry Jell-O powder in 1 cup of boiling water, stirring for at least 2 minutes until fully dissolved.
- Stir in the 1/2 cup of ice-cold water. Refrigerate the mixture for 15–20 minutes until it reaches a syrupy consistency.
- In a separate chilled bowl, beat the heavy whipping cream and powdered sugar until stiff peaks form.
- Using a rubber spatula, gently fold the whipped cream into the thickened Jell-O syrup until the color is uniform.
- Spoon the mousse into 6 individual dessert glasses and refrigerate for at least 4 hours to set.
- Before serving, garnish each cup with fresh raspberries, a mint sprig, and white chocolate shavings.
