Ingredients:
- 2 cups (250g) all-purpose flour
- 3/4 cup (150g) granulated sugar
- 1 tbsp (8g) ground cinnamon
- 2 tsp (10g) baking powder
- 1/2 tsp (3g) salt
- 1 large (50g) egg
- 1/2 cup (120ml) whole milk
- 1/3 cup (75g) unsalted butter, melted and cooled
- 1 tsp (5ml) vanilla extract
- 2 medium (300g) Granny Smith apples, peeled and grated
Instructions:
- Preheat oven to 375°F (190°C) and line a 12-cup standard muffin tin with paper liners.
- Peel and grate the Granny Smith apples, keeping the juice for moisture.
- In a large bowl, whisk together the flour, sugar, cinnamon, baking powder, and salt until no lumps remain.
- Create a well in the center of the dry ingredients and pour in the melted butter, egg, milk, and vanilla extract. Stir with a spatula until just combined.
- Gently fold the grated apples into the batter using a spatula.
- Divide the batter evenly among the 12 liners, filling them nearly to the top.
- Bake for 18–22 minutes or until a toothpick comes out clean.
- Cool in the pan for 5 minutes before transferring to a wire rack.
