Ingredients:
- 1 cup (150g) fresh strawberries, hulled and halved
- 1 cup (150g) cantaloupe, cubed into 1-inch pieces
- 1 cup (150g) fresh pineapple, cubed into 1-inch pieces
- 2 kiwis, peeled and sliced into thick rounds
- 1 cup (150g) blueberries
- 1 cup (150g) purple grapes, seedless
- 2 tbsp (30ml) honey
- 1 tbsp (15ml) fresh lime juice
- 1 pinch (0.5g) fine sea salt
Instructions:
- Cut the cantaloupe and pineapple into uniform 1-inch cubes and slice the kiwis into thick rounds.
- In a large mixing bowl, whisk together the honey, lime juice, and salt until the mixture is smooth.
- Gently fold the strawberries, cantaloupe, pineapple, and kiwis into the glaze. Toss lightly to coat without breaking the fruit.
- Assemble the skewers by sliding the fruit on in a rainbow sequence: strawberry, cantaloupe, pineapple, kiwi, blueberry, and grape.
- Place a grape or pineapple chunk at the bottom of each skewer to act as an anchor for stability.
- Drizzle any remaining honey lime mixture from the bowl over the finished skewers for a velvety finish.
- Place the completed skewers on a parchment lined tray in the fridge for 10 minutes until the glaze sets and feels tacky.
- Arrange them on a platter, perhaps overlapping them slightly.
