Ingredients:

  • 1 cup (150g) fresh strawberries, hulled and halved
  • 1 cup (150g) cantaloupe, cubed into 1-inch pieces
  • 1 cup (150g) fresh pineapple, cubed into 1-inch pieces
  • 2 kiwis, peeled and sliced into thick rounds
  • 1 cup (150g) blueberries
  • 1 cup (150g) purple grapes, seedless
  • 2 tbsp (30ml) honey
  • 1 tbsp (15ml) fresh lime juice
  • 1 pinch (0.5g) fine sea salt

Instructions:

  1. Cut the cantaloupe and pineapple into uniform 1-inch cubes and slice the kiwis into thick rounds.
  2. In a large mixing bowl, whisk together the honey, lime juice, and salt until the mixture is smooth.
  3. Gently fold the strawberries, cantaloupe, pineapple, and kiwis into the glaze. Toss lightly to coat without breaking the fruit.
  4. Assemble the skewers by sliding the fruit on in a rainbow sequence: strawberry, cantaloupe, pineapple, kiwi, blueberry, and grape.
  5. Place a grape or pineapple chunk at the bottom of each skewer to act as an anchor for stability.
  6. Drizzle any remaining honey lime mixture from the bowl over the finished skewers for a velvety finish.
  7. Place the completed skewers on a parchment lined tray in the fridge for 10 minutes until the glaze sets and feels tacky.
  8. Arrange them on a platter, perhaps overlapping them slightly.
