Ingredients:
- 1.5 cups (300g) long-grain white rice
- 3 cups (710ml) water
- 1 tsp (6g) salt
- 1 tbsp (14g) unsalted butter
- 1.5 lbs (680g) boneless skinless chicken breast, cubed
- 2 tbsp (30ml) olive oil
- 1 tsp (2g) smoked paprika
- 1 tsp (5g) garlic powder
- 1/2 tsp (3g) salt
- 1/4 tsp (1g) black pepper
- 1 can (15 oz / 425g) black beans, drained and rinsed
- 1 cup (150g) frozen corn, thawed
- 1 red bell pepper, diced
- 1/4 cup (15g) red onion, finely diced
- 1/2 cup (120g) sour cream
- 2 tbsp (30ml) fresh lime juice
- 1/4 cup (15g) fresh cilantro, chopped
- 1 clove (5g) garlic, minced
- 1 pinch salt
Instructions:
- Rinse the rice under cold water until the water runs clear to remove excess starch.
- In a pot, combine rice, water, salt, and butter. Bring to a boil over high heat.
- Reduce heat to low, cover tightly, and simmer for 15 minutes.
- Remove from heat and let sit, covered, for 5 minutes before fluffing with a fork.
- Pat the chicken cubes dry with a paper towel and toss with paprika, garlic powder, salt, and pepper.
- Heat olive oil in a skillet over medium-high heat until it shimmers.
- Add chicken in a single layer. Sear without moving for 3-4 minutes until a golden-brown crust forms.
- Flip and cook for another 3-4 minutes until cooked through. Remove from pan.
- In the same skillet used for the chicken, quickly sauté the diced bell pepper and red onion for 2-3 minutes until slightly softened.
- Stir in the black beans and corn, heating through for 60 seconds.
- Divide the fluffed rice into four bowls. Top with the seared chicken and the vegetable mixture.
- Whisk together sour cream, lime juice, cilantro, garlic, and salt, then drizzle the crema over the top.
