Ingredients:

  • 1/2 cup (115g) unsalted butter, melted
  • 1 cup (200g) granulated sugar
  • 2 cups (250g) all-purpose flour
  • 1/4 tsp (1.5g) salt
  • 1/2 cup (115g) unsalted butter, melted
  • 1 cup (200g) packed dark brown sugar
  • 1/2 cup (160ml) corn syrup
  • 2 large (100g) eggs
  • 1 tsp (5ml) vanilla extract
  • 2 cups (230g) chopped pecans

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a 9x9 inch baking pan with parchment paper, leaving an overhang for easy removal.
  2. Mix the melted butter, granulated sugar, flour, and salt until a crumbly dough forms.
  3. Press the mixture firmly and evenly into the bottom of the pan.
  4. Bake the crust for 15–20 minutes until the edges are just barely golden.
  5. While the crust is baking, whisk together the melted butter and brown sugar.
  6. Beat in the eggs one at a time, then stir in the corn syrup and vanilla extract until the mixture is velvety and smooth.
  7. Fold in the chopped pecans using a spatula until evenly distributed.
  8. Pour the pecan mixture over the warm, pre-baked crust and spread it evenly to the corners.
  9. Return the pan to the oven and bake for 20–25 minutes until the filling bubbles around the edges and the center has a slight, jelly-like wobble.
  10. Let the bars cool completely in the pan for approximately 2 hours before lifting them out via the parchment paper and slicing.
