Ingredients:

  • 225g unsalted butter, softened
  • 150g granulated white sugar
  • 1 large egg, room temperature
  • 5ml vanilla extract
  • 280g all-purpose flour
  • 5g baking soda
  • 3g salt
  • 28g unsalted butter, melted
  • 50g light brown sugar, packed
  • 8g ground cinnamon
  • 120g powdered sugar
  • 15-30ml whole milk
  • 1ml vanilla extract

Instructions:

  1. In a large bowl, beat the softened butter and white sugar until the mixture looks pale and fluffy (about 2 minutes).
  2. Mix in the egg and vanilla extract until fully incorporated.
  3. Slowly stir in the flour, baking soda, and salt. Mix only until the white streaks of flour disappear.
  4. In a small bowl, stir together melted butter, brown sugar, and cinnamon until it forms a thick paste.
  5. On a lightly floured surface, roll the dough into a rectangle (approximately 9x12 inches).
  6. Spread the cinnamon paste evenly across the dough, leaving a small margin at the edges.
  7. Carefully roll the dough into a tight log using the longer edge.
  8. Use a sharp knife to cut the log into 1-inch thick slices. Press the open ends of the spirals slightly to seal them.
  9. Place slices on a parchment-lined sheet. Bake at 350°F (175°C) for 10 minutes.
  10. Let the cookies rest on the pan for 5 minutes before moving them to a wire rack.
  11. Whisk icing ingredients together and drizzle over cooled cookies.
