Ingredients:

  • 4 cold-water lobster tails (5–6 oz each)
  • 1 tsp extra virgin olive oil
  • 0.5 tsp smoked paprika
  • 0.25 tsp kosher salt
  • 0.25 tsp freshly cracked black pepper
  • 4 tbsp unsalted butter, melted
  • 2 cloves garlic, finely minced
  • 1 tbsp fresh parsley, finely chopped
  • 1 tsp fresh lemon juice
  • 0.25 tsp dried oregano

Instructions:

  1. Use kitchen shears to cut down the center of the top shell, stopping just before the tail fin. Gently spread the shell open and pull the meat upward, resting it on top of the closed shell. Rinse and pat the meat completely dry.
  2. In a small mixing bowl, whisk together the melted unsalted butter, minced garlic, chopped parsley, lemon juice, and dried oregano.
  3. Place the prepared tails on a baking sheet. Brush the lobster meat generously with the garlic butter mixture. Sprinkle with smoked paprika, salt, and pepper.
  4. Set the oven to Broil on high (approx. 500°F) with the rack 5–6 inches below the element. Broil for approximately 8 minutes, or until the shells are bright red and the internal temperature reaches 140°F (60°C).
