Ingredients:

  • 1/2 cup (60g) all-purpose flour
  • 2 tbsp (28g) unsalted butter, softened
  • 3 tbsp (35g) powdered sugar
  • 1 tbsp (15ml) milk
  • 1/4 tsp (1g) vanilla extract
  • 1/8 tsp (0.75g) salt
  • 2 tbsp (30g) semi-sweet chocolate chips

Instructions:

  1. Pour 60g of flour into your microwave safe bowl. Note: Use a wide bowl to avoid hot spots.
  2. Microwave on high for 30 seconds. Stir the flour well to distribute the heat.
  3. Repeat the 30 second bursts, stirring each time, until the flour hits 160°F (71°C).
  4. Move the flour to a plate and let it cool for 5 minutes. Note: Adding hot flour to butter will melt the fat and ruin the texture.
  5. Put 28g of softened butter and 35g of powdered sugar in your mixing bowl.
  6. Stir vigorously with your spatula until the mixture looks pale and fluffy.
  7. Stir in 15ml of milk, 1g of vanilla, and 0.75g of salt.
  8. Mix until the batter is thick and glossy.
  9. Gently fold in 30g of chocolate chips.
  10. Mix just until the chips are evenly distributed. Note: Don't overmix or the dough will become gummy.
