Ingredients:
- 4 cups (600g) Roma tomatoes, seeded and finely diced
- 1/4 cup (60ml) extra virgin olive oil
- 2 tbsp (8g) fresh basil, chiffonade
- 1 clove (5g) garlic, minced
- 1/2 tsp (3g) kosher salt
- 1/4 tsp (1g) black pepper
- 1 loaf (300g) French baguette, sliced into 1/2 inch rounds
- 3 tbsp (42g) unsalted butter, melted
- 2 tbsp (30ml) extra virgin olive oil
- 1 whole clove (5g) garlic, peeled
Instructions:
- Toss the diced tomatoes with salt in a colander over a bowl and let sit for 5–10 minutes to drain excess moisture.
- In a mixing bowl, combine the drained tomatoes, minced garlic, sliced basil, olive oil, and black pepper; toss gently to coat.
- Preheat oven to 400°F (200°C). Brush both sides of the baguette slices with the melted butter and olive oil mixture.
- Arrange slices on a baking sheet and bake for 5–7 minutes, or until edges are golden-brown and centers are firm.
- Immediately after removing from the oven, rub the surface of each warm slice with the whole peeled garlic clove.
- Pile a generous amount of the tomato mixture onto each toasted slice.
- Serve immediately while the bread is warm and the topping is cool.
