Ingredients:
- 2 lbs fresh red snapper
- 2 tbsp Caribbean green seasoning
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- 1 cup all-purpose flour
- 1/2 cup cornstarch
- 1 tsp cayenne pepper
- 2 cups vegetable oil
Instructions:
- Using a sharp knife, make 3-4 diagonal slits across the thickest part of the snapper to ensure seasoning penetrates and the fish cooks evenly.
- Rub the Caribbean green seasoning, salt, pepper, paprika, and garlic powder into the slits and across the skin. Let the fish sit for 15 minutes at room temperature.
- In a shallow bowl, whisk together the all-purpose flour, cornstarch, and cayenne pepper.
- Pat the fish slightly with a paper towel to remove excess moisture from the marinade, then dredge the snapper in the flour mixture, pressing firmly to adhere and shaking off any excess.
- Heat vegetable oil in a cast iron skillet or deep fryer to 350°F (175°C).
- Carefully lower the fish into the oil and fry for 5-7 minutes per side until the crust is mahogany-colored and the fish is cooked through.
