Ingredients:

  • 2 lbs Chicken Wings (split into flats and drums)
  • 1/2 cup All-purpose flour
  • 1/2 cup Cornstarch
  • 1 tsp Baking powder
  • 1 tbsp Smoked paprika
  • 1 tbsp Garlic powder
  • 1 tsp Onion powder
  • 1 tsp Cayenne pepper
  • 2 tsp Kosher salt
  • 1 tsp Black pepper
  • 1 quart Peanut oil or Canola oil

Instructions:

  1. Pat 2 lbs Chicken Wings with paper towels until the skin feels tacky and no moisture remains.
  2. Whisk 1/2 cup All purpose flour, 1/2 cup Cornstarch, 1 tsp Baking powder, and all spices in a large bowl.
  3. Toss the wings in the dry mixture until every crevice is completely white.
  4. Pour 1 quart Peanut oil into a heavy pot and heat until a pinch of flour sizzles instantly.
  5. Carefully lower the wings into the oil in batches.
  6. Fry for 10-12 minutes until the wings turn a deep mahogany gold and float.
  7. Remove with a slotted spoon to a wire rack.
  8. Sprinkle a tiny pinch of extra salt immediately while the oil is still shimmering on the surface.
