Ingredients:
- 2 lbs Chicken Wings (split into flats and drums)
- 1/2 cup All-purpose flour
- 1/2 cup Cornstarch
- 1 tsp Baking powder
- 1 tbsp Smoked paprika
- 1 tbsp Garlic powder
- 1 tsp Onion powder
- 1 tsp Cayenne pepper
- 2 tsp Kosher salt
- 1 tsp Black pepper
- 1 quart Peanut oil or Canola oil
Instructions:
- Pat 2 lbs Chicken Wings with paper towels until the skin feels tacky and no moisture remains.
- Whisk 1/2 cup All purpose flour, 1/2 cup Cornstarch, 1 tsp Baking powder, and all spices in a large bowl.
- Toss the wings in the dry mixture until every crevice is completely white.
- Pour 1 quart Peanut oil into a heavy pot and heat until a pinch of flour sizzles instantly.
- Carefully lower the wings into the oil in batches.
- Fry for 10-12 minutes until the wings turn a deep mahogany gold and float.
- Remove with a slotted spoon to a wire rack.
- Sprinkle a tiny pinch of extra salt immediately while the oil is still shimmering on the surface.
