Ingredients:
- 1.5 cups whole milk
- 0.25 cup clover honey
- 1 packet active dry yeast
- 4 tbsp unsalted butter
- 1 large egg
- 1 tsp fine sea salt
- 4.25 cups all-purpose flour
- 0.5 cup salted butter
- 0.25 cup powdered sugar
- 0.25 cup honey
- 1 tsp ground cinnamon
Instructions:
- In the bowl of a stand mixer, combine the warm milk (105°F–110°F), honey, and yeast. Whisk gently and let sit for 5–10 minutes until foamy.
- Add melted butter, egg, and 2 cups of flour. Mix using the dough hook, gradually adding the remaining flour and salt until dough pulls away from the sides.
- Knead on medium-low for 5–7 minutes until smooth and elastic.
- Place dough in a greased bowl, cover, and let rise in a warm spot for 60–90 minutes until doubled in size.
- Punch dough down and roll into a rectangle 1/2 inch thick on a floured surface. Fold in half and cut into 24 even squares.
- Place rolls on greased baking sheets, cover, and let rise again for 45–60 minutes.
- Preheat oven to 350°F (175°C) and bake for 12–15 minutes until golden brown.
- Brush with melted butter immediately. In a separate bowl, whip softened salted butter, powdered sugar, honey, and cinnamon until light and airy.
