Ingredients:

  • 1.5 cups whole milk
  • 0.25 cup clover honey
  • 1 packet active dry yeast
  • 4 tbsp unsalted butter
  • 1 large egg
  • 1 tsp fine sea salt
  • 4.25 cups all-purpose flour
  • 0.5 cup salted butter
  • 0.25 cup powdered sugar
  • 0.25 cup honey
  • 1 tsp ground cinnamon

Instructions:

  1. In the bowl of a stand mixer, combine the warm milk (105°F–110°F), honey, and yeast. Whisk gently and let sit for 5–10 minutes until foamy.
  2. Add melted butter, egg, and 2 cups of flour. Mix using the dough hook, gradually adding the remaining flour and salt until dough pulls away from the sides.
  3. Knead on medium-low for 5–7 minutes until smooth and elastic.
  4. Place dough in a greased bowl, cover, and let rise in a warm spot for 60–90 minutes until doubled in size.
  5. Punch dough down and roll into a rectangle 1/2 inch thick on a floured surface. Fold in half and cut into 24 even squares.
  6. Place rolls on greased baking sheets, cover, and let rise again for 45–60 minutes.
  7. Preheat oven to 350°F (175°C) and bake for 12–15 minutes until golden brown.
  8. Brush with melted butter immediately. In a separate bowl, whip softened salted butter, powdered sugar, honey, and cinnamon until light and airy.
