Ingredients:

  • 2 lbs heirloom tomatoes
  • 12 oz fresh buffalo mozzarella
  • 1 bunch fresh basil leaves
  • 1 tsp flaky sea salt
  • 1/2 tsp freshly cracked black pepper
  • 1/4 cup extra virgin olive oil
  • 2 tbsp balsamic glaze

Instructions:

  1. Slice the tomatoes into uniform 6mm rounds. Lay them on a paper-towel-lined board for 2 minutes to remove excess surface moisture.
  2. On a serving platter, alternate slices of tomato and mozzarella, slightly overlapping each piece. Tuck one fresh basil leaf between each tomato and mozzarella slice.
  3. Sprinkle the flaky sea salt and cracked black pepper directly onto the tomatoes first. Wait 60 seconds to allow the salt to draw out the natural juices.
  4. Slowly drizzle the extra virgin olive oil over the entire platter and finish with a precise zig-zag of balsamic glaze.
