Ingredients:
- 2 lbs heirloom tomatoes
- 12 oz fresh buffalo mozzarella
- 1 bunch fresh basil leaves
- 1 tsp flaky sea salt
- 1/2 tsp freshly cracked black pepper
- 1/4 cup extra virgin olive oil
- 2 tbsp balsamic glaze
Instructions:
- Slice the tomatoes into uniform 6mm rounds. Lay them on a paper-towel-lined board for 2 minutes to remove excess surface moisture.
- On a serving platter, alternate slices of tomato and mozzarella, slightly overlapping each piece. Tuck one fresh basil leaf between each tomato and mozzarella slice.
- Sprinkle the flaky sea salt and cracked black pepper directly onto the tomatoes first. Wait 60 seconds to allow the salt to draw out the natural juices.
- Slowly drizzle the extra virgin olive oil over the entire platter and finish with a precise zig-zag of balsamic glaze.
