Ingredients:
- 12 oz Dark Chocolate Chips (at least 60% cacao)
- 1 tsp Refined Coconut Oil
- 1 cup Roasted Almonds, roughly chopped
- 1.5 tsp Flaky Sea Salt
- 0.5 tsp Vanilla Bean Paste
Instructions:
- Line a baking sheet with parchment paper. If using raw nuts, toast in a dry pan over medium heat for 3–5 minutes until golden and fragrant; let cool completely before proceeding. Note: Cooling the nuts prevents them from melting the chocolate too quickly upon contact.
- Place 9 oz of dark chocolate in a microwave safe glass bowl. Microwave in 30 second bursts at 50% power, stirring between each, until smooth and glossy.
- Stir the remaining 3 oz of chocolate and the coconut oil into the melted mixture. Stir continuously until the 'seed' chocolate is fully melted and the mixture looks like liquid silk.
- Add the vanilla bean paste to the mixture. Stir gently until the vanilla flecks are evenly distributed.
- Pour the chocolate onto the prepared baking sheet and spread with a spatula to 1/4 inch thickness. Use long, smooth strokes until the surface is flat and even.
- Immediately sprinkle with the chopped almonds. Press them very lightly into the surface until they are nestled into the chocolate.
- Wait 2 minutes for the chocolate to reach the 'tack' stage. This is when the surface looks slightly less shiny but is still soft.
- Finish with a sprinkle of flaky sea salt. The crystals should sit proudly on top without sinking or dissolving.
- Refrigerate for 20–30 minutes until the chocolate is completely set and cold to the touch.
- Remove from the fridge and break into irregular shards by hand or with a sharp knife for a more geometric look.
