Ingredients:

  • 12 oz Dark Chocolate Chips (at least 60% cacao)
  • 1 tsp Refined Coconut Oil
  • 1 cup Roasted Almonds, roughly chopped
  • 1.5 tsp Flaky Sea Salt
  • 0.5 tsp Vanilla Bean Paste

Instructions:

  1. Line a baking sheet with parchment paper. If using raw nuts, toast in a dry pan over medium heat for 3–5 minutes until golden and fragrant; let cool completely before proceeding. Note: Cooling the nuts prevents them from melting the chocolate too quickly upon contact.
  2. Place 9 oz of dark chocolate in a microwave safe glass bowl. Microwave in 30 second bursts at 50% power, stirring between each, until smooth and glossy.
  3. Stir the remaining 3 oz of chocolate and the coconut oil into the melted mixture. Stir continuously until the 'seed' chocolate is fully melted and the mixture looks like liquid silk.
  4. Add the vanilla bean paste to the mixture. Stir gently until the vanilla flecks are evenly distributed.
  5. Pour the chocolate onto the prepared baking sheet and spread with a spatula to 1/4 inch thickness. Use long, smooth strokes until the surface is flat and even.
  6. Immediately sprinkle with the chopped almonds. Press them very lightly into the surface until they are nestled into the chocolate.
  7. Wait 2 minutes for the chocolate to reach the 'tack' stage. This is when the surface looks slightly less shiny but is still soft.
  8. Finish with a sprinkle of flaky sea salt. The crystals should sit proudly on top without sinking or dissolving.
  9. Refrigerate for 20–30 minutes until the chocolate is completely set and cold to the touch.
  10. Remove from the fridge and break into irregular shards by hand or with a sharp knife for a more geometric look.
