Ingredients:
- 2 cups (250g) all-purpose flour
- 1/2 cup (100g) granulated sugar
- 1/2 cup (115g) unsalted butter, softened
- 1/4 cup (60ml) unsweetened applesauce
- 1 large egg
- 1 tsp (5ml) vanilla extract
- 1 tsp (5g) baking powder
- 1/4 tsp (1.5g) salt
- 1 cup (120g) powdered sugar
- 2 tbsp (30ml) milk
- 1 tsp (5ml) vanilla extract
- 3 drops food coloring
Instructions:
- Cream together the softened butter, granulated sugar, and unsweetened applesauce until the mixture is pale and fluffy.
- Beat in the egg and vanilla extract until fully incorporated.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually stir the dry ingredients into the wet mixture until a soft, non-sticky dough forms.
- Roll the dough to 1/4 inch thickness on a floured surface and use cookie cutters to create shapes.
- Place cookies on a parchment-lined sheet with 2 inches of space between each.
- Bake at 350°F (175°C) for 8-10 minutes until edges are pale golden.
- Allow cookies to cool on the pan for 5 minutes before transferring to a wire rack.
- Mix powdered sugar, milk, and vanilla extract until smooth. Divide into bowls and add food coloring.
- Pipe the glaze onto the cooled cookies to create mortarboard or diploma designs.
