Ingredients:
- 2 cups (250g) all-purpose flour
- 1/2 cup (100g) light brown sugar, packed
- 1 tbsp (8g) baking powder
- 1 tsp (2g) ground cinnamon
- 1/2 tsp (3g) salt
- 1/2 cup (115g) unsalted butter, melted and cooled
- 2 large eggs, room temperature
- 1/2 cup (120ml) unsweetened applesauce
- 1/4 cup (60ml) whole milk
- 1 tsp (5ml) pure vanilla extract
- 2 cups (300g) peeled and finely diced Granny Smith apples
- 1 tbsp (8g) all-purpose flour
- 1/2 tsp (1g) ground cinnamon
Instructions:
- Preheat oven to 375°F (190°C) and line a 12-cup standard muffin tin with paper liners.
- In a small bowl, toss the finely diced apples with 1 tablespoon of flour and 1/2 teaspoon of cinnamon until coated.
- In a large bowl, whisk together the 2 cups of flour, brown sugar, baking powder, cinnamon, and salt, ensuring any brown sugar clumps are broken up.
- In a medium bowl, whisk together the melted butter, eggs, applesauce, milk, and vanilla extract until smooth and emulsified.
- Pour the wet ingredients into the dry ingredients and fold together using a spatula until just combined.
- Gently fold the prepared apple mixture into the batter until evenly distributed.
- Divide the batter evenly among the 12 muffin liners and bake for 17 minutes, or until a toothpick inserted into the center comes out clean.
