Ingredients:

  • 2 medium organic limes (approx. 130g), thoroughly washed
  • 2 cups cold filtered water (475ml)
  • 2 tbsp Monk fruit sweetener
  • 1 cup crushed ice (150g)
  • 0.25 tsp sea salt
  • 0.25 cup concentrated Butterfly Pea Flower Tea (optional)
  • 0.5 inch fresh ginger root knob

Instructions:

  1. Scrub the lime skins thoroughly. Trim the ends and slice each lime into 8 wedges.
  2. Place lime wedges, water, sweetener, and salt into the blender. Pulse 5–8 times only to avoid bitterness from the white pith.
  3. Immediately pour the mixture through a fine-mesh strainer into a pitcher. Press out all lime essence with a spoon and discard solids.
  4. Return the strained liquid to the blender. Add the ice and optional ginger or butterfly pea tea. Blend on high for 10 seconds until frothy and creamy.
  5. Pour into a chilled glass and serve immediately while the foam is thick.
