Ingredients:
- 1 lb ground beef (80/20 blend)
- 1 tbsp extra virgin olive oil
- 100g yellow onion, finely diced
- 2 cloves garlic, minced
- 1 tbsp taco seasoning
- 60ml beef broth
- 11 large flour tortillas
- 340g shredded Mexican blend cheese
- 55g unsalted butter, melted
- 1 tsp dried oregano
Instructions:
- In a large skillet over medium-high heat, brown the ground beef until no pink remains. Add diced onions and cook until translucent.
- Stir in minced garlic and taco seasoning. Pour in beef broth and simmer for 3-4 minutes until liquid reduces. Set aside to cool.
- Stack flour tortillas and cut them in half to create semi-circles.
- Place a parchment-lined baking sheet down and put a 3-4 inch heat-proof ramekin in the center.
- Take a half-tortilla, place 1 tablespoon of cheese and 1 tablespoon of beef along the straight edge, and roll into a tight cone shape.
- Arrange the cones in a circular pattern around the ramekin, overlapping slightly to form a ring. Brush with melted butter and sprinkle with oregano.
- Bake at 400°F (200°C) for 15 minutes or until the edges are golden brown and crispy.
