Ingredients:

  • 1 lb ground beef (80/20 blend)
  • 1 tbsp extra virgin olive oil
  • 100g yellow onion, finely diced
  • 2 cloves garlic, minced
  • 1 tbsp taco seasoning
  • 60ml beef broth
  • 11 large flour tortillas
  • 340g shredded Mexican blend cheese
  • 55g unsalted butter, melted
  • 1 tsp dried oregano

Instructions:

  1. In a large skillet over medium-high heat, brown the ground beef until no pink remains. Add diced onions and cook until translucent.
  2. Stir in minced garlic and taco seasoning. Pour in beef broth and simmer for 3-4 minutes until liquid reduces. Set aside to cool.
  3. Stack flour tortillas and cut them in half to create semi-circles.
  4. Place a parchment-lined baking sheet down and put a 3-4 inch heat-proof ramekin in the center.
  5. Take a half-tortilla, place 1 tablespoon of cheese and 1 tablespoon of beef along the straight edge, and roll into a tight cone shape.
  6. Arrange the cones in a circular pattern around the ramekin, overlapping slightly to form a ring. Brush with melted butter and sprinkle with oregano.
  7. Bake at 400°F (200°C) for 15 minutes or until the edges are golden brown and crispy.
