Ingredients:

  • 115g unsalted butter, softened
  • 150g granulated sugar
  • 50g large egg
  • 10ml pure vanilla extract
  • 250g all-purpose flour
  • 5g baking powder
  • 1.5g salt
  • 8g cornstarch
  • 90g rainbow sprinkles
  • 90g mini white chocolate chips

Instructions:

  1. Cream the softened butter and sugar in a large bowl using a medium speed until the mixture looks pale and fluffy.
  2. Beat in the egg and vanilla extract until the batter is smooth and completely emulsified.
  3. Sift together the flour, baking powder, salt, and cornstarch into a separate bowl.
  4. Gradually stir the dry ingredients into the wet mixture on low speed until a soft dough forms.
  5. Gently fold in the rainbow sprinkles and white chocolate chips by hand using a spatula.
  6. Scoop rounded tablespoons of dough onto lined sheets, spacing them 2 inches apart.
  7. Bake at 350°F (175°C) for 10-12 minutes until the edges are set but the centers still look slightly underbaked.
  8. Remove them from the oven and let them cool on the pan for 5 minutes before moving them to a wire rack.
