Ingredients:
- 115g unsalted butter, softened
- 150g granulated sugar
- 50g large egg
- 10ml pure vanilla extract
- 250g all-purpose flour
- 5g baking powder
- 1.5g salt
- 8g cornstarch
- 90g rainbow sprinkles
- 90g mini white chocolate chips
Instructions:
- Cream the softened butter and sugar in a large bowl using a medium speed until the mixture looks pale and fluffy.
- Beat in the egg and vanilla extract until the batter is smooth and completely emulsified.
- Sift together the flour, baking powder, salt, and cornstarch into a separate bowl.
- Gradually stir the dry ingredients into the wet mixture on low speed until a soft dough forms.
- Gently fold in the rainbow sprinkles and white chocolate chips by hand using a spatula.
- Scoop rounded tablespoons of dough onto lined sheets, spacing them 2 inches apart.
- Bake at 350°F (175°C) for 10-12 minutes until the edges are set but the centers still look slightly underbaked.
- Remove them from the oven and let them cool on the pan for 5 minutes before moving them to a wire rack.
