Ingredients:

  • 1 lb Lean Ground Beef (90/10)
  • 0.5 lb Lean Ground Pork
  • 0.5 cup Whole wheat breadcrumbs or Panko
  • 0.25 cup Low-fat milk
  • 1 large Egg, lightly beaten
  • 0.5 cup Freshly grated Parmesan cheese
  • 3 cloves Garlic, minced
  • 2 tbsp Fresh parsley, finely chopped
  • 1 tsp Dried oregano
  • 1 tsp Sea salt
  • 0.5 tsp Cracked black pepper

Instructions:

  1. Preheat your oven to 400°F. Line a large baking sheet with parchment paper. Having everything ready prevents you from touching oven handles with meat covered hands later.
  2. In a small bowl, combine the 0.5 cup breadcrumbs and 0.25 cup milk. Let it sit for 5 minutes until it forms a thick paste.
  3. In a large bowl, combine the beef, pork, beaten egg, Parmesan, garlic, herbs, and the soaked breadcrumbs. Use your hands to mix until just combined. Stop as soon as the streaks of egg disappear.
  4. Using a scoop or a tablespoon, portion out the mixture into 1.5 inch balls. Place the meatballs on the prepared sheet, leaving an inch of space between them.
  5. Bake for 18 to 20 minutes until the tops are browned and the centers reach 165°F.
  6. Remove from the oven and let them sit on the tray for 3 to 5 minutes. This allows the juices to redistribute so they don't run out when you bite in.
