Ingredients:
- 1 cup (225g) unsalted butter, softened to room temperature
- 1 cup (200g) granulated sugar
- 1 large (50g) egg
- 2 tsp (10ml) vanilla extract
- 2 ½ cups (310g) all-purpose flour
- ½ tsp (3g) baking soda
- ¼ tsp (1.5g) salt
- ½ cup (60g) rainbow sprinkles
- 1 cup (120g) powdered sugar
- 2 tbsp (30ml) milk
- 2 tbsp (20g) rainbow sprinkles
Instructions:
- Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper or silicone mats.
- In a large bowl, beat the softened butter and granulated sugar on medium-high speed until the mixture is pale, fluffy, and sweet.
- Beat in the egg and vanilla extract until the batter is completely smooth and glossy.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet batter on low speed, mixing just until combined.
- Using a rubber spatula, gently fold in the rainbow sprinkles by hand until evenly distributed.
- Scoop rounded tablespoons of dough and place them 2 inches apart on the prepared baking sheets.
- Bake for 10–11 minutes; remove when the edges are barely set and pale gold, while the centers still look slightly underbaked.
- Let cookies cool on the pan for 5 minutes before transferring them to a wire rack.
- Whisk together the powdered sugar and milk to create a simple icing, drizzle over cooled cookies, and top with extra rainbow sprinkles.
