Ingredients:

  • 1 cup (225g) unsalted butter, softened to room temperature
  • 1 cup (200g) granulated sugar
  • 1 large (50g) egg
  • 2 tsp (10ml) vanilla extract
  • 2 ½ cups (310g) all-purpose flour
  • ½ tsp (3g) baking soda
  • ¼ tsp (1.5g) salt
  • ½ cup (60g) rainbow sprinkles
  • 1 cup (120g) powdered sugar
  • 2 tbsp (30ml) milk
  • 2 tbsp (20g) rainbow sprinkles

Instructions:

  1. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper or silicone mats.
  2. In a large bowl, beat the softened butter and granulated sugar on medium-high speed until the mixture is pale, fluffy, and sweet.
  3. Beat in the egg and vanilla extract until the batter is completely smooth and glossy.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet batter on low speed, mixing just until combined.
  6. Using a rubber spatula, gently fold in the rainbow sprinkles by hand until evenly distributed.
  7. Scoop rounded tablespoons of dough and place them 2 inches apart on the prepared baking sheets.
  8. Bake for 10–11 minutes; remove when the edges are barely set and pale gold, while the centers still look slightly underbaked.
  9. Let cookies cool on the pan for 5 minutes before transferring them to a wire rack.
  10. Whisk together the powdered sugar and milk to create a simple icing, drizzle over cooled cookies, and top with extra rainbow sprinkles.
