Ingredients:

  • 1/2 cup (65g) all-purpose flour
  • 1/2 cup (100g) packed light brown sugar
  • 1 tsp (2g) ground cinnamon
  • 4 tbsp (56g) unsalted butter, cold and cubed
  • 2 cups (250g) all-purpose flour
  • 3/4 cup (150g) granulated sugar
  • 1 tbsp (6g) baking powder
  • 1/2 tsp (3g) salt
  • 1 tsp (2g) ground cinnamon
  • 3/4 cup (180ml) milk, room temperature
  • 1 large egg, room temperature
  • 1/2 cup (115g) unsalted butter, melted and cooled
  • 1/2 cup (120g) unsweetened applesauce
  • 1 1/2 cups (225g) Granny Smith apples, peeled and finely diced
  • 1 tsp (5ml) vanilla extract

Instructions:

  1. In a medium bowl, whisk together 65g flour, brown sugar, and 2g cinnamon. Work in the cold cubed butter using a spatula or fingertips until pea-sized clumps form. Refrigerate until needed.
  2. Preheat oven to 425°F (218°C).
  3. In a large bowl, whisk together 250g flour, granulated sugar, baking powder, salt, and 2g cinnamon.
  4. In a separate jug, whisk together milk, egg, melted butter, applesauce, and vanilla extract.
  5. Pour the wet ingredients into the dry ingredients and stir with a spatula just until combined; do not overmix.
  6. Gently fold in the diced Granny Smith apples.
  7. Spoon batter into lined muffin cups, filling them about 3/4 full, and top with the chilled streusel mixture.
  8. Bake at 425°F (218°C) for 5 minutes, then immediately reduce temperature to 350°F (175°C) and bake for another 15-20 minutes until a toothpick comes out clean.
