Ingredients:

  • 2 cups (250g) all-purpose flour
  • 3/4 cup (150g) granulated sugar
  • 1 tbsp (6g) baking powder
  • 1 tsp (2g) baking soda
  • 1 1/2 tsp (4g) ground cinnamon
  • 1/2 tsp (3g) salt
  • 1 large egg (50g)
  • 1/2 cup (120ml) vegetable oil
  • 3/4 cup (180ml) milk
  • 1 tsp (5ml) vanilla extract
  • 2 cups (300g) peeled and diced Granny Smith apples
  • 2 tbsp (25g) melted butter
  • 2 tbsp (25g) granulated sugar
  • 1/2 tsp (1g) ground cinnamon

Instructions:

  1. Preheat your oven to 425°F (218°C) and line a 12-cup standard muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, and salt.
  3. In a separate jug, beat the egg, oil, milk, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir with a spatula until just combined; do not overmix.
  5. Gently fold in the diced apples until evenly distributed throughout the batter.
  6. Spoon the batter into the liners, filling them almost to the top to encourage a high dome.
  7. Mix the melted butter, 2 tbsp sugar, and 1/2 tsp cinnamon for the topping, then sprinkle evenly over each muffin.
  8. Bake at 425°F (218°C) for 5 minutes, then reduce the oven heat to 375°F (190°C) and bake for another 15 minutes.
  9. Remove from oven when a toothpick inserted into the center comes out clean and the tops are golden-brown.
