Ingredients:

  • 1 lb red snapper fillets
  • 2 tbsp avocado oil
  • 1 tbsp Old Bay seasoning
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1 cup broccoli florets
  • 1 cup red bell pepper, sliced
  • 1 tbsp olive oil
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 lemon, cut into wedges
  • 1 tbsp fresh parsley, chopped

Instructions:

  1. Pat the red snapper fillets bone dry with paper towels. Note: This is the most important step for a crust.
  2. Rub each fillet with avocado oil until lightly coated.
  3. Mix the Old Bay, garlic powder, and smoked paprika, then press the rub into both sides of the fish.
  4. Toss the broccoli and sliced red bell peppers in a bowl with olive oil, salt, and pepper.
  5. Place the vegetables in the air fryer basket.
  6. Cook the vegetables at 400°F (200°C) for 5 minutes until the edges just start to brown.
  7. Push the vegetables to the sides of the basket to make a space in the middle.
  8. Place the seasoned snapper fillets in the center.
  9. Cook at 400°F (200°C) for 7-10 minutes without flipping until the fish reaches 145°F (63°C) and looks mahogany colored.
  10. Remove from the fryer, squeeze fresh lemon over the top, and sprinkle with parsley.
