Ingredients:
- 1 lb red snapper fillets
- 2 tbsp avocado oil
- 1 tbsp Old Bay seasoning
- 1/2 tsp garlic powder
- 1/2 tsp smoked paprika
- 1 cup broccoli florets
- 1 cup red bell pepper, sliced
- 1 tbsp olive oil
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1 lemon, cut into wedges
- 1 tbsp fresh parsley, chopped
Instructions:
- Pat the red snapper fillets bone dry with paper towels. Note: This is the most important step for a crust.
- Rub each fillet with avocado oil until lightly coated.
- Mix the Old Bay, garlic powder, and smoked paprika, then press the rub into both sides of the fish.
- Toss the broccoli and sliced red bell peppers in a bowl with olive oil, salt, and pepper.
- Place the vegetables in the air fryer basket.
- Cook the vegetables at 400°F (200°C) for 5 minutes until the edges just start to brown.
- Push the vegetables to the sides of the basket to make a space in the middle.
- Place the seasoned snapper fillets in the center.
- Cook at 400°F (200°C) for 7-10 minutes without flipping until the fish reaches 145°F (63°C) and looks mahogany colored.
- Remove from the fryer, squeeze fresh lemon over the top, and sprinkle with parsley.
