Ingredients:
- 1.5 lb boneless, skinless chicken breast, cut into 1-inch cubes
- 2 tbsp extra-virgin olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/3 cup honey
- 2 tbsp low-sodium soy sauce
- 3 cloves garlic, minced
- 1 tsp fresh ginger, minced
- 1 tbsp water
Instructions:
- Pat the chicken cubes dry with a paper towel and season with salt and pepper.
- Heat olive oil in a large non-stick skillet or wok over medium-high heat until shimmering.
- Add the chicken in a single layer and cook without moving for 3 minutes until golden brown, then flip and cook for another 2 minutes.
- Reduce heat to medium. Push the chicken to the sides of the pan and add the minced garlic and ginger to the center, sautéing for 30-60 seconds until fragrant.
- In a small mixing bowl, whisk together the honey, soy sauce, and water.
- Pour the honey garlic mixture over the chicken. Stir constantly for 2-3 minutes as the sauce bubbles and reduces into a thick, velvety coating.
