Ingredients:

  • 1.5 lb boneless, skinless chicken breast, cut into 1-inch cubes
  • 2 tbsp extra-virgin olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/3 cup honey
  • 2 tbsp low-sodium soy sauce
  • 3 cloves garlic, minced
  • 1 tsp fresh ginger, minced
  • 1 tbsp water

Instructions:

  1. Pat the chicken cubes dry with a paper towel and season with salt and pepper.
  2. Heat olive oil in a large non-stick skillet or wok over medium-high heat until shimmering.
  3. Add the chicken in a single layer and cook without moving for 3 minutes until golden brown, then flip and cook for another 2 minutes.
  4. Reduce heat to medium. Push the chicken to the sides of the pan and add the minced garlic and ginger to the center, sautéing for 30-60 seconds until fragrant.
  5. In a small mixing bowl, whisk together the honey, soy sauce, and water.
  6. Pour the honey garlic mixture over the chicken. Stir constantly for 2-3 minutes as the sauce bubbles and reduces into a thick, velvety coating.
